Classic Banana Soft Serve

Fall may be just around the corner, but many of us are still experiencing triple-digit heat. It’s hot out there, and a cold, sweet treat is in order!

What I love about this Banana Soft Serve is that it’s not only delicious, but it’s packed with nutrients and is SO EASY to make.

Bananas are a great source of Potassium and Magnesium, along with Folate, Vitamin C and Vitamin B6.

You can use just one ingredient – bananas – and have a delicious dessert, or you can add in a few other items to make it your own.

Ingredients:

• 2 bananas, cut into slices and frozen

Directions:

Place frozen banana slices into the bowl of a food processor or blender.

Pulse until the texture resembles soft-serve ice cream, about 3 minutes. You may need to scrape the sides of the food processor or blender with a rubber spatula occasionally.

Serve immediately.

Notes: I like to keep bananas in the freezer for this soft serve and to use in smoothies. Whenever I have a few bananas that get too ripe, I just peel them and put them in an airtight container in the freezer so I can pull them out anytime.

Recipe Variations:

Follow the directions above and add in any of the following to switch up flavors and boost nutrients.

– 1/2 cup frozen berries, mango, peaches or other favorite fruit
– 1/2 an avocado (this can be fresh avocado or you can buy frozen avocado at many stores, including Costco). You’ll get an extra dose of healthy fats, and it will make your soft serve super creamy.
– High-quality, unsweetened cocoa powder, to taste, for a delicious chocolate treat
– 1 cup spinach leaves – this won’t flavor your “ice cream”, but it will give it a huge nutritional boost.

After processing the banana mixture, you can also gently fold in other ingredients. If the banana mixture gets too soft, just pop it into the freezer for about 10 minutes to firm up after folding in your favorite ingredients. Here are some suggestions for mix-ins:

– 1/4 cup chopped pecans, almonds or walnuts will give you some added protein and healthy fats, along with a little crunch.
– Roughly chop a couple of squares of dark chocolate (85% – 100% cacao) and fold in.
– 2 Tbsp. of hemp seed for added protein and a little texture.
– 1-2 Tbsp. almond, cashew or favorite nut butter

If your ice cream gets too thick, you can thin it out with some coconut milk, almond milk, coconut water or a splash of heavy cream if you tolerate cow’s dairy.
