Steak and Spring Mix Salad with Lemon Tarragon Dressing

It’s warming up here in Texas, which means grilling and hearty salads are on our minds. This Steak & Spring Mix Salad with Lemon Tarragon Dressing really fits the bill! Loaded with a variety of greens and veggies, this salad is packed with nutrients and antioxidants, and they are naturally cooling to the body, which is so helpful as those outdoor temps creep up.

Additionally, dark, leafy greens are an excellent source of dietary nitrates. (Note: Dietary nitrates are not to be confused with the nitrates found in foods like bacon. Dietary nitrates are naturally occurring and vital for our health).

Nitric oxide (NO) is an important gas that occurs in the lining of our blood vessels. NO is important for all cellular functions and is critical for the health of our blood vessels. NO opens up (dilates) the blood vessels, increases blood flow to the brain, prevents clots, aids in strong heart contraction (beats), lowers blood pressure and reduces inflammation. Many other veggies and herbs are loaded with dietary nitrates, as well, including fennel, tomatoes, onion, and tarragon, which you’ll also find in this recipe.

This salad is not only quick and easy, but it’s also loaded with protein, fiber, and healthy fats. It’s a super flavorful and balanced meal. Whether you need a quick lunch or an easy weeknight meal, this recipe is sure to become a staple in your meal planning!

Here’s the recipe:

Ingredients:

FOR STEAK

4 oz NY Strip Steak, fat trimmed
1 tsp Butter or Coconut Oil
1/4 tsp Garlic, minced
1/4 tsp Sea Salt
1/8 tsp Black Pepper

FOR SALAD

4 cups Spring mix-spinach, endive, radicchio
1/4 cup red onion, thinly sliced
1/4 cup thinly sliced fennel
1/2 cup cherry tomatoes, halved

FOR DRESSING

2 tbsp lemon juice
1 tbsp olive oil or coconut oil
1 tbsp fresh tarragon leaves, finely chopped
1/4 tsp sea salt
1/4 tsp black pepper

What to Do:

1. WHISK together ingredients for dressing in a small bowl. Set aside.
2. ADD spring mix, tomato, and fennel to a large bowl. Toss with dressing. Arrange the salad in a bowl or serving dish. Scattered onion slices.
3. HEAT a skillet over high heat. Season steak with salt and pepper. Once the pan is very hot add steak. Cook 3-4 minutes. Turn steak over and add butter and garlic to the pan. Use tongs to move the steak around in butter and garlic. Cook an additional 3-4 minutes. Allow steak to rest 5 minutes. Thinly slice steak and place over salad.
