Chipotle Spiced Chicken and Sweet Potato Wedges

Who says healthy food needs to be boring? Spice up your dinner with a dish that’s as delicious as it is nutritious: chipotle spiced chicken paired with sweet potato wedges. This dynamic duo brings together the smoky heat of chipotle seasoning and the natural sweetness of the potatoes, creating a palate-pleasing contrast. This meal is super simple to make, just throw it in the oven and it practically makes itself.  Plus, it’s also packed with essential nutrients, making it a guilt-free indulgence that is so satisfying and honestly delicious enough to impress dinner guests.

Now, let’s dive into the juicy details that make this dish as healthy as it is delicious.  Chicken breast is packed with high-quality protein that supports muscle growth and repair, fights off hunger and provides you with sustained energy.

Sweet potatoes are basically  the unsung heroes of the root vegetable world. They are full of beta-carotene, which your body converts into vitamin A, essential for eye health, immune function, and glowing skin (you know we love that!) Plus, their high fiber content means you’re not just satisfied; you’re nourished, supporting healthy digestion and keeps cravings at bay.

And let’s not forget the spice!  The chipotle powder isn’t just here for its smoky flavor; it brings antioxidants and capsaicin to the party, known for their anti-inflammatory properties and metabolism-boosting effects.  Even the raw honey packs  antibacterial and anti-inflammatory benefits with its touch of sweetness.

Then we tie it all together with a dollop of Greek yogurt dip, rich in probiotics for gut health, and a squeeze of lime for a vitamin C boost.  Food really is medicine!! 

Ingredients: 

  • 12 ounces (roughly 1lb) of Chicken Breast 
  • 1 Sweet Potato (large, cut into wedges)
  • 1 1/2 tbsps Raw Honey (warmed)
  • 3 tbsps Extra Virgin Olive Oil
  • 1 tsp Chipotle Powder
  • Sea Salt & Black Pepper (to taste)
  • 3/4 cup Plain Greek Yogurt
  • 1/4 cup Cilantro (finely chopped)
  • 1 tsp Lime Juice

Instructions: 

  1. Preheat the oven to 400ºF (205ºC).
  2. Place the chicken on one baking sheet and the sweet potato on a second baking sheet.
  3. In a bowl, mix together the honey, oil, and chipotle and season with salt and pepper. Pour half over the chicken and half over the sweet potatoes. Use your hands to distribute the best you can (it will be sticky).
  4. Space out the sweet potatoes evenly so there isn’t any overlap. Place the wedges into the oven and cook for 13 minutes. Don’t put in your chicken just yet.
  5. After 13 minutes have passed, remove the sweet potato, flip them over to the other side of the wedge, and place them back in the oven. 
  6. This time, grab the chicken and place the chicken in the oven and bake for 15 to 20 minutes, or until cooked through. (So, you should have your chicken and potatoes in the oven at the same time now!)
  7.  To brown the chicken more, broil for two minutes at the end of cooking. Remove the sweet potato prior if needed so they do not overcook.
  8. Lastly, in a bowl, combine the yogurt, cilantro, and lime juice. Season with salt and pepper.
  9. Divide the chicken and sweet potato onto plates and serve with the dip on the side for the chicken and wedges. Enjoy!
