Butternut Squash Fries

If you saw my recipe for the Black Bean and Quinoa Burgers from last week, then you’re going to love this recipe for Butternut Squash Fries! We all love a good burger and fries, and these recipes remove any guilt!

Butternut squash is high in nutrients including vitamins A and C, potassium and magnesium. Butternut squash makes an excellent alternative to potatoes and can be used in a variety of recipes. With garlic powder and just a dash of cayenne, these delicious fries have a savory, spicy kick!

INGREDIENTS:

1 large Butternut Squash
¼ cup of Olive Oil
1 Tbsp. Garlic Powder
1 tsp. Cayenne Pepper (optional)
Sea Salt and freshly ground Black Pepper to taste

INSTRUCTIONS:

1. Preheat oven to 400° F.
2. Cut the ends off the squash, peel the skin, cut the squash in half, de-seed, then cut into “fry” sticks.
3. Place fries in a mixing bowl and coat with oil and seasonings.
4. On a greased baking sheet (or on parchment paper), arrange fries in a single layer.
5. Roast for 30-35 minutes or until golden and crisp.
